CSU-Pueblo and Chartwells Dining Services are opening a new dining location on campus, The Bistro, in association with two local partners on the main level of Culebra Hall, one of the two new residence halls that opened this week.

This café-like dining facility with seating area offers an on-site dining option for students living on campus in the residence halls and the campus community alike. The Bistro at Culebra Hall will be open during the morning and late evenings, providing sandwiches, salads, and grab-and-go items. In addition, CSU-Pueblo and Chartwells have partnered with local Pueblo-owned businesses Little Caesars Pizza and Solar Roast Coffee to offer additional menu options to the location.

The Bistro at Culebra Hall will be open for business following a Grand Opening from 2-4 p.m. on Monday, Aug. 23. Regular operating hours will be Monday-Thursday: 7 a.m.-9:30 a.m. and 4 p.m.- midnight, Friday and Saturday: 4-10 p.m., and Sunday: 4 p.m.-midnight. Little Caesars Pizza was originally founded by Mike and Marion Ilitch in 1959 in Detroit, Michigan. Dave Feamster, a former Chicago Blackhawk Hockey Club player and Detroit native, was granted franchise rights to Pueblo, CO in 1986 and opened his first location on the south side of Pueblo that December.  In the past 24 years, he has expanded to eight restaurants in Lamar and La Junta, and five locations in Pueblo and Canon City. Feamster has given back to the Pueblo community in many ways, including sponsoring teams and events.  He also has supported CSU-Pueblo athletic programs as a corporate sponsor since 1994.

Solar Roast Coffee has been roasting coffee by way of the sun since 2004. Founders Michael and David Hartkop had their start in southern Oregon, and moved their business to Pueblo in 2007. Pueblo was their number-one choice because of its year-round sunlight, and the nearly untapped coffee market! They opened their first shop in downtown Pueblo on the corner of 3rd and Main Street, and set up a large solar coffee roaster in Pueblo County. In 2010, they opened a second retail location in the Pueblo Mall. Solar Roast also sells its coffee in a number of noteworthy locations, including the Pueblo Convention Center, several restaurants in Pueblo and Canon City, and now CSU-Pueblo!
